I do not understand the meaning of the HttpContext.SignInAsync and HttpContext.SignOutAsync methods. In what scenarios should I use them?How to use them?

As you said, SignInAsync is just there to create tokens that hold identity for subsequent requests. So I can also use a normal Controller/Action for this purpose. For example, JWT Authentication does not provide SignInAysnc.

In the JWT approach, you are controlling the Token by yourself, against the Cookie/Session based authentication that the HttpContext built-in Identity will do it.
But also you can change the behavior of built-in identity management system to writes the JWT instead of Cookie based Auth.

The IdentityServer or OpenIdict will do something this.
