By default, Nginx Proxy Addon looks for custom configuration files in /share folder. I think that we should mount /config as well and store configuration files in /config/addons_config/nginx/.
I know this means having /config mounted and may lead to additional security issues. But in my specific case, i don't backup /share (because it's way too large for some addons libraries that can be regerated in any case) but losing configurations in case of a disaster could be an issue, and i don't have HA esposed to the internet.
