console: Update enterprise options

Console's enterprise login options have become fairly out of date. We're missing a handful of properties from OIDC and likely more as well. We need to update/synchronize the types OR fallback to making them map[string]string's. We should also switch the console deployment to start using the envFrom option instead of explicitly setting every variable from the generated secret.
