This is in conjunction with vshymanskyy/TinyGSM#731
It is as two commits - the first one for the testing environment and the second one for the actual changes to enviroDIY.
I'm designing it so that it can be easily tested on real hardware, and then the 2nd commit can be cherry picked to merge with (develop)
Its using a development base build of a/DRWI_SIM7080LTE/ modified for a Digi WiFi S6B device.
and a ModularSensors reference build of sensors_test/DRWI_SIM7080LTE/ - The appropiate files platformio.ini need to be modified for the test environment
