Motivation and Context
In view of the migration of the APIM in italynorth, this PR was created which contains the configuration of all the functions that will point to the new APIM, it will be applied after making the backup and restore on the new APIM in ITN.
Subsequently, all the old references to the v2 apim will be removed.
