Enable profiling on chains dogfood deployment to get more visibility into tektoncd/chains#1058
This enables profiling on port :8008 by default. (see https://github.com/knative/pkg/blob/9f033a7b77f78eec90328ec7e5aa376b3f9812a3/profiling/server.go#L112-L115)
